The Heat the Kitchen Was Built Around
At Brooklyn, a Mibrasa coal-fired grill burns hardwood charcoal at around 700°F — the heat a Galician asador would recognize. At both locations, an Earthstone wood-fired oven holds the steady radiant heat of a Mediterranean clay hearth.
Nothing in the kitchen touches seed oil. Every dish is cooked in Iliada extra virgin olive oil and beef tallow. The Coravin program pours Assyrtiko, Xinomavro, and other Mediterranean varieties by the glass — grapes most Jacksonville wine lists have never carried.
"You can taste where everything came from."

What's on the Table Comes from Somewhere Specific
The first oil to touch your table is Iliada — PDO-certified Kalamata, under 0.4% acidity. The same oil goes into every dish in the kitchen. Every protein traces to a named producer. Every supplier earns its place by name at Alder & Oak Wood-Fired Aegean Restaurant Jacksonville. The full list lives one click away.
