The Heat the Kitchen Was Built Around

At Brooklyn, a Mibrasa coal-fired grill burns hardwood charcoal at around 700°F — the heat a Galician asador would recognize. At both locations, an Earthstone wood-fired oven holds the steady radiant heat of a Mediterranean clay hearth.

Nothing in the kitchen touches seed oil. Every dish is cooked in Iliada extra virgin olive oil and beef tallow. The Coravin program pours Assyrtiko, Xinomavro, and other Mediterranean varieties by the glass — grapes most Jacksonville wine lists have never carried.
